Flavor Profile
Chikmagalur Midnight Robusta is a bold, spice-driven coffee with an unmistakably heavy body and low-acid profile. Notes of black pepper, dark cocoa, tobacco, black tea, and bittering spice create a deep, savory cup with remarkable structure and intensity. The finish lingers with earthy richness and cola-like depth, while the washed processing keeps the cup surprisingly clean and focused for a Robusta.
Why Choose This Coffee?
Most coffee drinkers spend their entire coffee journey exploring Arabica coffees. This micro-lot offers the opportunity to experience something dramatically different — a carefully processed specialty-grade Robusta selected for clarity, drinkability, and exceptional espresso performance. Fans of dark roasts, Italian-style espresso, and heavier-bodied coffees will appreciate its rustic intensity, thick crema production, and uncommon flavor profile.
More Details
This coffee comes from the Chikmagalur region of Karnataka, India — one of the country’s oldest and most historically important coffee-growing regions. While Robusta is often associated with lower-grade commercial coffee, this lot was selected specifically because it demonstrates how refined and expressive the varietal can become when cultivated and processed with specialty-level care.
The coffee is fully washed and patio sun-dried, helping preserve structure and cup cleanliness while still allowing the varietal’s naturally bold character to dominate the experience. Its low acidity and heavy texture make it particularly well suited for espresso preparation and darker roast development.
We will be roasting this coffee darker than most of our micro-lot offerings to emphasize body, spice complexity, and bittersweet depth rather than fruit-forward sweetness or delicate acidity.

Brewing Recommendations
Ideal for bold brewing methods that emphasize body, crema, and darker flavor development.
- Drip Coffee: Produces a rich, earthy cup with strong cocoa and spice character.
- Pour Over: Best brewed slightly stronger than normal to enhance texture and reduce thinness.
- French Press: Excellent choice for maximizing body, pepper notes, and lingering finish.
- Cold Brew: Creates a dense, low-acid concentrate with dark chocolate and cola-like depth.
- Espresso: Outstanding application for this coffee — heavy crema, intense body, and traditional Italian-style character.
- AeroPress: Produces a concentrated, syrupy cup with pronounced spice complexity.
- Single Cup Brewing: Works well in pod-compatible brewers when using a slightly larger coffee dose for fuller extraction.
We are continually evaluating and being conscious about using packaging that both provides peak storage and is sustainable so packaging may vary slightly from photographs.
